One-Pan Baked Chicken, Potatoes & Green Beans
Ingredients:
- 3–4 chicken breasts (or thighs), skin-on or skinless
- 1 lb (450g) baby potatoes, diced
- 1 lb (450g) fresh green beans, trimmed
- 3 tbsp olive oil (or melted butter)
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp dried thyme (or rosemary)
- Salt & black pepper to taste
- Juice of ½ lemon
Optional: 2 tbsp Dijon mustard or honey mustard for extra flavor in the chicken marinade.
Instructions:
- Preheat oven to 400°F (200°C).
- Season the chicken
- Rub chicken with olive oil, garlic, paprika, oregano, thyme, salt, pepper, and lemon juice.
- Let it sit while preparing vegetables.
- Prepare veggies
- Toss diced potatoes and green beans with olive oil, salt, pepper, and a pinch of paprika.
- Assemble the dish
- In a large baking dish, arrange chicken on one side, potatoes and green beans on the other.
- Pour any leftover marinade over everything.
- Bake
- Bake uncovered for 35–45 minutes, until chicken reaches 165°F (74°C) internal temperature and potatoes are golden.
- Serve
- Slice chicken as shown in your picture, drizzle pan juices over the top, and enjoy!
