Creamy Pecan Pie Recipe
Ingredients:
For the crust (or use store-bought):
- 1 ½ cups all-purpose flour
- ½ cup (1 stick) unsalted butter, chilled & cubed
- ¼ cup ice water
- ½ tsp salt
For the creamy filling:
- 1 package (8 oz / 225g) cream cheese, softened
- ½ cup sugar
- 1 egg
- ½ tsp vanilla extract
For the pecan topping:
- 1 cup chopped pecans (plus a few halves for garnish)
- ½ cup light corn syrup (or honey/maple syrup for variation)
- ½ cup brown sugar
- 2 eggs, lightly beaten
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions:
- Prepare the crust
- Mix flour, salt, and butter until crumbly. Add ice water gradually until dough forms.
- Roll out and fit into a 9-inch pie pan. Chill for 15 minutes. Pre-bake at 350°F (175°C) for 10 minutes.
- Make the creamy layer
- Beat cream cheese, sugar, egg, and vanilla until smooth.
- Spread evenly over the cooled crust.
- Prepare the pecan topping
- In a bowl, whisk corn syrup, brown sugar, eggs, melted butter, and vanilla.
- Stir in chopped pecans.
- Assemble & bake
- Pour pecan mixture over cream cheese layer.
- Bake at 350°F (175°C) for 40–45 minutes until set and golden.
- Cool & serve
- Let pie cool completely before slicing (this helps it set).
- Serve as is, or with whipped cream or vanilla ice cream.
