Creamy Pecan Pie Recipe

Ingredients:

For the crust (or use store-bought):

  • 1 ½ cups all-purpose flour
  • ½ cup (1 stick) unsalted butter, chilled & cubed
  • ¼ cup ice water
  • ½ tsp salt

For the creamy filling:

  • 1 package (8 oz / 225g) cream cheese, softened
  • ½ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

For the pecan topping:

  • 1 cup chopped pecans (plus a few halves for garnish)
  • ½ cup light corn syrup (or honey/maple syrup for variation)
  • ½ cup brown sugar
  • 2 eggs, lightly beaten
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the crust
    • Mix flour, salt, and butter until crumbly. Add ice water gradually until dough forms.
    • Roll out and fit into a 9-inch pie pan. Chill for 15 minutes. Pre-bake at 350°F (175°C) for 10 minutes.
  2. Make the creamy layer
    • Beat cream cheese, sugar, egg, and vanilla until smooth.
    • Spread evenly over the cooled crust.
  3. Prepare the pecan topping
    • In a bowl, whisk corn syrup, brown sugar, eggs, melted butter, and vanilla.
    • Stir in chopped pecans.
  4. Assemble & bake
    • Pour pecan mixture over cream cheese layer.
    • Bake at 350°F (175°C) for 40–45 minutes until set and golden.
  5. Cool & serve
    • Let pie cool completely before slicing (this helps it set).
    • Serve as is, or with whipped cream or vanilla ice cream.
