Cheesy Garlic Butter Corn on the Cob

Ingredients:

  • 6–8 mini corn cobs (or 3–4 large, cut in half)
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp paprika (or smoked paprika)
  • 1 tsp chili powder (optional, for spice)
  • Salt & black pepper, to taste
  • 1 cup shredded mozzarella (or Monterey Jack / cheddar)
  • 2 tbsp fresh parsley or cilantro, chopped
  • Juice of ½ lime (optional, for freshness)

Instructions:

  1. Prep the corn
    • Boil or steam corn for 5–7 minutes until tender but still firm. Drain and set aside.
  2. Make garlic butter
    • In a large skillet, melt butter over medium heat.
    • Add minced garlic, paprika, chili powder, salt, and pepper. Stir until fragrant (about 1 minute).
  3. Cook the corn
    • Place corn into the skillet, rolling it in the garlic butter until fully coated.
    • Let it sear for a couple of minutes to get some golden brown spots.
  4. Add cheese
    • Sprinkle shredded cheese over the corn.
    • Cover the skillet with a lid for 2–3 minutes until cheese melts and becomes gooey.
  5. Finish & serve
    • Garnish with chopped parsley/cilantro.
    • Squeeze a little lime juice on top for extra flavor.
    • Serve hot with extra garlic butter from the pan spooned over the top.
