Cheesy Garlic Butter Corn on the Cob
Ingredients:
- 6–8 mini corn cobs (or 3–4 large, cut in half)
- 4 tbsp butter
- 3 cloves garlic, minced
- 1 tsp paprika (or smoked paprika)
- 1 tsp chili powder (optional, for spice)
- Salt & black pepper, to taste
- 1 cup shredded mozzarella (or Monterey Jack / cheddar)
- 2 tbsp fresh parsley or cilantro, chopped
- Juice of ½ lime (optional, for freshness)
Instructions:
- Prep the corn
- Boil or steam corn for 5–7 minutes until tender but still firm. Drain and set aside.
- Make garlic butter
- In a large skillet, melt butter over medium heat.
- Add minced garlic, paprika, chili powder, salt, and pepper. Stir until fragrant (about 1 minute).
- Cook the corn
- Place corn into the skillet, rolling it in the garlic butter until fully coated.
- Let it sear for a couple of minutes to get some golden brown spots.
- Add cheese
- Sprinkle shredded cheese over the corn.
- Cover the skillet with a lid for 2–3 minutes until cheese melts and becomes gooey.
- Finish & serve
- Garnish with chopped parsley/cilantro.
- Squeeze a little lime juice on top for extra flavor.
- Serve hot with extra garlic butter from the pan spooned over the top.
