Mexican Taco Casserole Recipe
Ingredients:
- 1 lb (450g) ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic, onion powder)
- 1 can (15 oz) refried beans
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 1 cup corn kernels (optional)
- 8 small flour or corn tortillas (or tortilla chips)
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 cup sour cream
- ½ cup sliced black olives
- 1 fresh tomato, diced
- 1 jalapeño, sliced
- Fresh cilantro, chopped
- 2 green onions, chopped
Instructions:
- Cook the beef
- In a skillet, brown the ground beef.
- Drain excess fat, then stir in taco seasoning + a little water. Cook 2 minutes.
- Layer the casserole
- In a greased baking dish, place a layer of tortillas (or crushed tortilla chips).
- Spread refried beans over them.
- Add half of the taco meat, some corn, and a sprinkle of cheese.
- Repeat layers until ingredients are used up.
- Spread sour cream on top, then finish with a big layer of shredded cheese.
- Bake
- Bake at 375°F (190°C) for about 20–25 minutes, until cheese is melted and bubbly.
- Top it off
- Add fresh toppings: black olives, jalapeños, diced tomatoes, green onions, and cilantro.
- Serve
- Slice into squares and serve warm with salsa, guacamole, or more sour cream.
