Mexican Taco Casserole Recipe

Ingredients:

  • 1 lb (450g) ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic, onion powder)
  • 1 can (15 oz) refried beans
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
  • 1 cup corn kernels (optional)
  • 8 small flour or corn tortillas (or tortilla chips)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 cup sour cream
  • ½ cup sliced black olives
  • 1 fresh tomato, diced
  • 1 jalapeño, sliced
  • Fresh cilantro, chopped
  • 2 green onions, chopped

Instructions:

  1. Cook the beef
    • In a skillet, brown the ground beef.
    • Drain excess fat, then stir in taco seasoning + a little water. Cook 2 minutes.
  2. Layer the casserole
    • In a greased baking dish, place a layer of tortillas (or crushed tortilla chips).
    • Spread refried beans over them.
    • Add half of the taco meat, some corn, and a sprinkle of cheese.
    • Repeat layers until ingredients are used up.
    • Spread sour cream on top, then finish with a big layer of shredded cheese.
  3. Bake
    • Bake at 375°F (190°C) for about 20–25 minutes, until cheese is melted and bubbly.
  4. Top it off
    • Add fresh toppings: black olives, jalapeños, diced tomatoes, green onions, and cilantro.
  5. Serve
    • Slice into squares and serve warm with salsa, guacamole, or more sour cream.
