Ingredients:

  • 1 cup creamy peanut butter (or crunchy if you like texture)
  • ½ cup powdered sugar
  • 2 Tbsp butter (softened)
  • 1 tsp vanilla extract
  • 2–3 cups semi-sweet chocolate chips (or milk chocolate, depending on taste)
  • 2 Tbsp coconut oil (optional, for smoother coating)

Instructions:

  1. Make Filling
    • In a bowl, mix peanut butter, powdered sugar, butter, and vanilla until smooth and dough-like.
    • Roll into small balls, then flatten into discs (about cookie size). Place on a parchment-lined tray.
  2. Chill
    • Freeze or refrigerate the patties for at least 30 minutes so they firm up before dipping.
  3. Melt Chocolate
    • In a microwave or double boiler, melt chocolate chips with coconut oil until smooth.
  4. Dip Patties
    • Using a fork, dip each peanut butter disc into melted chocolate, coating completely.
    • Place back onto parchment paper.
  5. Set
    • Chill again for about 1 hour until the chocolate hardens.
  6. Store
    • Keep in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
