🍫 Homemade Chocolate-Covered Peanut Butter Patties
Ingredients:
- 1 cup creamy peanut butter (or crunchy if you like texture)
- ½ cup powdered sugar
- 2 Tbsp butter (softened)
- 1 tsp vanilla extract
- 2–3 cups semi-sweet chocolate chips (or milk chocolate, depending on taste)
- 2 Tbsp coconut oil (optional, for smoother coating)
Instructions:
- Make Filling
- In a bowl, mix peanut butter, powdered sugar, butter, and vanilla until smooth and dough-like.
- Roll into small balls, then flatten into discs (about cookie size). Place on a parchment-lined tray.
- Chill
- Freeze or refrigerate the patties for at least 30 minutes so they firm up before dipping.
- Melt Chocolate
- In a microwave or double boiler, melt chocolate chips with coconut oil until smooth.
- Dip Patties
- Using a fork, dip each peanut butter disc into melted chocolate, coating completely.
- Place back onto parchment paper.
- Set
- Chill again for about 1 hour until the chocolate hardens.
- Store
- Keep in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
