🥘 Hearty Beef Stew

Ingredients:

  • 800 g (1.7 lbs) beef chuck or stewing beef (cut into cubes)
  • 3 tbsp vegetable oil
  • 2 medium onions (chunky pieces)
  • 2 carrots (sliced thick)
  • 2 bell peppers (red & green, chopped)
  • 2 potatoes (optional, cubed)
  • 3 garlic cloves (minced)
  • 2 tbsp tomato paste
  • 2 tbsp flour (to thicken)
  • 4 cups beef broth (or water + bouillon)
  • 1 tbsp Worcestershire sauce (or soy sauce)
  • 1 tsp paprika
  • 1 bay leaf
  • 1 tsp thyme or rosemary (optional)
  • Salt & black pepper (to taste)

Instructions:

  1. Brown the Beef
    • Heat oil in a large pot.
    • Sear beef cubes until browned on all sides. Remove and set aside.
  2. Cook the Vegetables
    • In the same pot, add onions, carrots, peppers, and garlic.
    • Sauté for 5–6 minutes until slightly softened.
  3. Build the Base
    • Stir in tomato paste and flour, cook 1 minute.
    • Slowly pour in beef broth while stirring to avoid lumps.
  4. Simmer
    • Return beef to the pot.
    • Add Worcestershire, paprika, bay leaf, thyme, salt, and pepper.
    • Cover and simmer on low heat for 1.5–2 hours (or until beef is tender). Stir occasionally.
  5. Finish & Serve
    • Remove bay leaf, adjust seasoning.
    • Serve hot with crusty bread, rice, or mashed potatoes.
