🥘 Hearty Beef Stew
Ingredients:
- 800 g (1.7 lbs) beef chuck or stewing beef (cut into cubes)
- 3 tbsp vegetable oil
- 2 medium onions (chunky pieces)
- 2 carrots (sliced thick)
- 2 bell peppers (red & green, chopped)
- 2 potatoes (optional, cubed)
- 3 garlic cloves (minced)
- 2 tbsp tomato paste
- 2 tbsp flour (to thicken)
- 4 cups beef broth (or water + bouillon)
- 1 tbsp Worcestershire sauce (or soy sauce)
- 1 tsp paprika
- 1 bay leaf
- 1 tsp thyme or rosemary (optional)
- Salt & black pepper (to taste)
Instructions:
- Brown the Beef
- Heat oil in a large pot.
- Sear beef cubes until browned on all sides. Remove and set aside.
- Cook the Vegetables
- In the same pot, add onions, carrots, peppers, and garlic.
- Sauté for 5–6 minutes until slightly softened.
- Build the Base
- Stir in tomato paste and flour, cook 1 minute.
- Slowly pour in beef broth while stirring to avoid lumps.
- Simmer
- Return beef to the pot.
- Add Worcestershire, paprika, bay leaf, thyme, salt, and pepper.
- Cover and simmer on low heat for 1.5–2 hours (or until beef is tender). Stir occasionally.
- Finish & Serve
- Remove bay leaf, adjust seasoning.
- Serve hot with crusty bread, rice, or mashed potatoes.
