Chicken Parmesan (Oven-Baked)

Ingredients:

  • 2 large chicken breasts (cut in half lengthwise = 4 cutlets)
  • 1 cup flour (for dredging)
  • 2 eggs (beaten)
  • 1 ½ cups breadcrumbs (Italian seasoned or panko)
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 2 tbsp olive oil (or enough for frying)
  • Salt & pepper to taste
  • Fresh basil (optional for garnish)

Instructions:

  1. Prep the Chicken:
    • Pound chicken cutlets evenly (about ½ inch thick).
    • Season with salt and pepper.
  2. Breading:
    • Dredge chicken in flour → dip in beaten eggs → coat with breadcrumbs mixed with parmesan.
  3. Cook:
    • Fry lightly in olive oil until golden brown on both sides (doesn’t need to be fully cooked through).
  4. Assemble:
    • Place cutlets on a baking tray.
    • Spoon marinara sauce on top.
    • Sprinkle generously with mozzarella and extra parmesan.
  5. Bake:
    • Bake at 200°C (400°F) for 15–20 minutes until chicken is cooked through and cheese is bubbly golden.
  6. Serve:
    • Garnish with basil.
    • Serve with spaghetti, garlic bread, or a fresh salad.
