Ingredients
For the Filling:
· 1 tablespoon olive oil
· 1 small onion, finely diced
· 2 cloves garlic, minced
· 1 lb (450g) ground beef (85/15 lean/fat)
· 1 teaspoon salt
· ½ teaspoon black pepper
· 1 teaspoon paprika
· ½ teaspoon dried oregano
· 2 tablespoons tomato paste
· 1 tablespoon Worcestershire sauce
· ¼ cup beef broth or water
· 1 cup shredded cheese (cheddar, mozzarella, or a blend)
· Optional add-ins: ¼ cup finely diced bell peppers, 2 tablespoons chopped parsley, ¼ teaspoon red pepper flakes
For Assembly:
· 2 sheets frozen puff pastry, thawed (usually 1 box)
· 1 egg + 1 tablespoon water (for egg wash)
· Sesame seeds or poppy seeds for topping (optional)
· Flour for dusting
For Serving (Optional):
· Marinara sauce, ranch dressing, or sour cream for dipping
Instructions
- Prepare the Filling
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened (4-5 minutes).
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef, breaking it up with a spoon. Cook until browned (6-8 minutes).
- Drain excess fat if needed (leave about 1 tablespoon for flavor).
- Stir in salt, pepper, paprika, oregano, tomato paste, and Worcestershire sauce. Cook for 1 minute.
- Add beef broth and cook for 2-3 more minutes until liquid is mostly absorbed. Remove from heat and let cool completely.
- Once cool, stir in shredded cheese. Refrigerate for 15 minutes if still warm.
- Assemble the Pockets
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- On a lightly floured surface, roll each puff pastry sheet into a 10×10 inch square.
- Cut each sheet into 4 equal squares (5×5 inches each).
- Place about 2-3 tablespoons of filling in the center of each square, leaving a ½-inch border.
- Brush the edges with egg wash (whisk egg with water).
- Fold one corner over to the opposite corner to form a triangle. Press edges firmly with a fork to seal.
- Transfer to baking sheets, leaving 1 inch between pockets.
- Brush tops with egg wash and sprinkle with seeds if using. Cut 2-3 small slits in the top of each for steam to escape.
- Bake
- Bake for 18-22 minutes, rotating pans halfway, until golden brown and puffed.
- Let cool on the baking sheet for 5 minutes before serving (filling will be very hot).
Tips for Success
· Cool filling is crucial—warm filling will melt the pastry and make it soggy.
· Don’t overfill—too much filling will cause leaks during baking.
· Work quickly with puff pastry to keep it cold; return to refrigerator if it gets too soft.
· For extra flavor, add a teaspoon of Italian seasoning or a pinch of cayenne to the beef.
· You can substitute ground turkey or chicken for a lighter version.
Make-Ahead & Storage
· To freeze unbaked: Assemble pockets, place on baking sheet and freeze solid, then transfer to freezer bags. Bake from frozen, adding 3-5 minutes to baking time.
· To store baked: Keep in airtight container for up to 3 days. Reheat in oven or air fryer at 350°F (175°C) for 5-7 minutes to restore crispness.
· Freezer-friendly: Both unbaked and baked pockets freeze well for up to 3 months.
