Butterfinger Balls
A no-bake treat that captures the iconic Butterfinger candy flavor in bite-sized form! Crispy, peanut buttery, and coated in chocolate.
Ingredients
· 2 cups creamy peanut butter
· 1/2 cup (1 stick / 113g) unsalted butter, softened
· 1 teaspoon vanilla extract
· 4 cups powdered sugar
· 2 cups crispy rice cereal (like Rice Krispies)
· 12 oz (about 2 cups) milk or dark chocolate melting wafers or chopped chocolate
· 1 tablespoon coconut oil or shortening (optional, for thinning chocolate)
Optional garnish: crushed Butterfinger bars, extra peanut butter drizzle, or flaky sea salt.
Instructions
- Mix the Filling
· In a large bowl, combine peanut butter, softened butter, and vanilla. Mix until smooth (hand mixer or stand mixer works best).
· Gradually add powdered sugar, about 1 cup at a time, mixing well after each addition.
· Fold in crispy rice cereal until evenly distributed.
- Form the Balls
· Scoop mixture (about 1 tablespoon each) and roll into 1-inch balls. Place on a parchment-lined baking sheet.
· If mixture is too soft, chill for 15–20 minutes before rolling.
· Once all balls are rolled, freeze for at least 30 minutes to firm up (makes dipping easier).
- Coat in Chocolate
· Melt chocolate wafers (or chopped chocolate + coconut oil) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
· Using a fork or dipping tool, dip each frozen ball into melted chocolate, letting excess drip off.
· Return to parchment-lined sheet.
· If desired, sprinkle immediately with crushed Butterfinger bits or a pinch of sea salt.
- Set and Serve
· Let chocolate set at room temperature, or refrigerate for 15–20 minutes to speed up setting.
· Store in an airtight container at cool room temperature for up to 1 week, or refrigerate for up to 2 weeks.

· Gluten-free: Use certified gluten-free crispy rice cereal.
· Extra crunch: Add ½ cup finely crushed Butterfinger bars to the filling mix.
· Darker chocolate: Use semi-sweet or dark chocolate to balance sweetness.
· Quick fix: If short on time, use pre-made peanut butter cookie dough mixed with crushed cereal — form balls, freeze, then dip.
