· 3 large eggs, separated
· 1 tsp vanilla extract
· 75g (approx. ⅓ cup) granulated sweetener suitable for baking (see note above)
· 1 tsp lemon juice or white vinegar (helps stabilize the egg whites)
· A pinch of salt
Instructions
- Preheat Oven: Preheat your oven to 160°C (320°F / Gas Mark 3). Line a baking tray with non-stick baking parchment.
- Separate Eggs: Carefully separate the egg yolks from the whites. It is crucial that no trace of yolk gets into the whites, or they will not whip properly.
- Whip the Egg Whites: In a very clean, dry, glass or metal bowl, add the egg whites, lemon juice (or vinegar), and pinch of salt. Using an electric hand mixer or a stand mixer with the whisk attachment, whisk on high speed until the mixture forms stiff peaks. This means when you lift the whisk out, the peak of egg white will stand straight up and not droop.
- Add Sweetener and Flavour: Once you have stiff peaks, gradually add the granulated sweetener, a spoonful at a time, while continuing to whisk on high. Whisk until the mixture is thick, glossy, and the sweetener is fully incorporated. Then, gently fold in the vanilla extract.
- Shape the Cloud: Spoon the meringue mixture onto the prepared baking tray, shaping it into a rough circle or rectangle about 2-3 inches high. You can make one large cloud or several individual ones.
- Create a Well: Use the back of a spoon to make a slight dip or well in the center of the cloud. This helps it bake more evenly and gives you a place to add fruit later.
- Bake: Place in the preheated oven and bake for 25-30 minutes. The cloud should be lightly golden on the outside and feel firm to the touch. It will still be a little soft and marshmallowy inside – this is perfect!
