Old-Fashioned Beef Vegetable Soup Recipe
Ingredients
- 1 ½ pounds beef stew meat (chuck or round), cut into chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 3 medium potatoes, peeled and cubed
- 2 cups green beans, trimmed and cut
- 1 can (14.5 oz) diced tomatoes
- 8 cups beef broth (low sodium if preferred)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add the beef chunks and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery for 4–5 minutes until fragrant.
- Return beef to the pot. Add diced tomatoes, beef broth, potatoes, green beans, bay leaves, thyme, basil, parsley, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1 ½ to 2 hours, until beef is tender and vegetables are soft.
- Taste and adjust seasoning. Remove bay leaves before serving.
