- 4 boneless chicken breasts
- 2 cups pineapple chunks (fresh or canned, drained)
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 tbsp honey (or brown sugar)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper, to taste
Instructions
- Preheat Oven/Grill
- Heat oven to 400°F (200°C) or preheat grill to medium-high.
- Prepare the Marinade
- In a small bowl, whisk together soy sauce, honey, olive oil, garlic powder, paprika, salt, and pepper.
- Assemble the Packets
- Place each chicken breast in the center of a piece of foil.
- Brush with marinade, then top with pineapple, bell pepper, and zucchini.
- Seal & Cook
- Fold foil tightly to make packets.
- Bake 25–30 minutes (oven) or grill 20–25 minutes until chicken is cooked through (165°F / 74°C).
