Classic Meatloaf with Roasted Potatoes

Ingredients
For the Meatloaf:
· 2 lbs ground beef (80/20 blend)

For the Roasted Potatoes:
· 2 lbs Yukon Gold potatoes, cut into 1-inch chunks
· 3 tbsp olive oil
· 1 tsp garlic powder
· 1 tsp dried rosemary
· Salt and pepper to taste
Instructions
Prepare the Meatloaf:
- Preheat oven to 375°F (190°C).
- In a small bowl, soak breadcrumbs in milk for 5 minutes.
- In a large bowl, combine ground beef, soaked breadcrumbs, onion, garlic, eggs, parsley, Worcestershire sauce, thyme, salt, and pepper.
- Mix gently with your hands until just combined (do not overmix).
- Form into a loaf shape in the center of a 9×13 inch baking dish.
Prepare Potatoes and Glaze:
- Toss potato chunks with olive oil, garlic powder, rosemary, salt, and pepper.
- Arrange potatoes around the meatloaf in the baking dish.
- In a small bowl, mix all glaze ingredients until smooth.
- Spread glaze evenly over the top of the meatloaf.
Bake:
- Bake for 55-65 minutes, or until meatloaf reaches 160°F internally.
- Let meatloaf rest for 10 minutes before slicing.
- Serve hot with the roasted potatoes.
