Ingredients:
½ cup unsalted butter, softened
½ cup peanut butter
½ cup granulated sugar
½ cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
¾ cup mini chocolate chips
12 mini Reese’s peanut butter cups, unwrapped
½ cup melted chocolate (for drizzle)
Directions:
Preheat oven to 350°F (175°C) and grease a mini muffin tin.
In a bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
Add the egg and vanilla, mixing until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients.
Stir in mini chocolate chips.
Roll dough into 1-inch balls and place into the mini muffin tin.
Bake for 10-12 minutes, or until golden brown.
While warm, press a mini Reese’s peanut butter cup into the center of each cookie bite.
Let cool completely, then drizzle with melted chocolate.
